Add olive oil and garlic. Sauté until fragrant. Stir to prevent burning.
Add onions, peppers and celery and stir. Sauté until tender.
Add beans, diced tomatoes and tomato sauce and stir together.
Add McCormick seasoning mix or chili mix, paprika, oregano, red pepper flakes and stir.
Add water and stir.
Add salt to taste.
Raise heat to bring to a high simmer. Then reduce heat to maintain a light simmer for 15-20 minutes. Stir occasionally. Don’t let chili stick to the bottom of the pot.
